Chocolate Icebox Cookies

Ingredients to prepare double chocolate Icebox Cookies
- 4 ounces Deglet dates (about 16)
- 1.5 ounces bittersweet chocolate chips (about ¼ cup)
- 4 egg whites
- 2 teaspoons pure vanilla
- 1 cup plus 2 tablespoons unsweetened chocolate
Step to prepare
- Place the dates during a small bowl and canopy with hot water . Let soak for 10 minutes until softened. Drain the water.
- Place the softened dates during a kitchen appliance and puree until smooth.
- Add the chocolate chips and pulse a couple of times to interrupt them up. Add the egg whites and vanilla and pulse a couple of times to mix . Add the chocolate and pulse to mix . The dough are going to be thick and a touch sticky.
- Tear off an outsized piece of wrapping and lay it flat on the counter. Place the dough within the center and shape into a log. Roll up the dough within the wrapping and still shape until the dough may be a smooth log, about 1¼ inches in diameter. Freeze for two hours or more, until the dough is firm and sliceable.
- When you are able to bake, heat the oven to 350°F. Line a sheet pan with parchment paper. Unwrap the dough and slice through ¼-inch thick coins.
- Bake until just set, about 8 minutes. Serve warm.
